A Week's Soaking Schedule


 I have my soaking schedule all laid out. Now if I can only get into the habit of checking my list before I go to bed!
   Rule of Thumb: Let beans soak for 24 hours- don't worry, in the summer I have to change the water before it sours, and the next step is a sprouted bean and that is great!
Let grains and nuts soak over night (although I read where oatmeal should be soaked for 24 hrs too! I really look at the raw oats in granola differently now ).
Add in the soaking water an acid such as kefir, buttermilk, etc or vinegar or lemon juice to release the phytic acid that inhibits mineral absorption and good digestion. 
    I'm not completely eliminating this phytic acid with these soaking times but I am dropping it considerably. And since our diet is mainly whole grains, fruits and vegetables, I feel the need to learn how this works to get all we can out of what we eat.
    Remember these are my baby steps! I love raw almonds...apparently I should be soaking them!

Sunday night:  
Beans for Tuesday (a few lbs, I try and alternate according to the meal plan).
Millet (for Mon. morning's breakfast) with kefir added.
Monday night: 
My No-Knead Bread recipe with a few tbs of kefir added.
A recipe for cornbread (no eggs) for Tue. morning breakfast - using kefir as the liquid,  minus baking soda, powder and salt (add just before baking)
 Tuesday night: 
Rice (for Wed. morning breakfast) with a few Tbs kefir added.
Beans again(usually for a salad or sandwich spread like hummus)! A different variety (sometimes I get to much so I just bag it up and put them in the freezer).
Wednesday night: 
A recipe for tortillas ( recipe and tutorial coming soon).
Bread again
Cream of wheat- this didn't turn out so great the first time I did it, it could have been the lemon juice I used!
Thursday night:  
Oatmeal - use kefir or buttermilk!
Pizza Dough
Beans (sometimes I don't need this batch!)
Friday night:  
waffles (everything but the eggs,soda, b.powder)
Saturday night:
 So far nothing is scheduled!

  1. Interesting...I never have read anything about adding an aciditic agent to soaking bean for aide in digestion.  Thanks for sharing.

    If you are using the NT recipe for crispy almonds they are delish and quite the treat. my last batch were not quite crispy enough, prolly didnt dehydrate them long enough. but i found a use for them, i grind them up and coat food in them instead of using flour. Since I am trying to avoid grains atm.

    Some beans are nicer to me than others. Soaking helps but unless we can remove the hulls sometimes they will overfiber you! Remove or grind- chickpeas in hummus doesn't bother me otherwise, I keep away from them.
    You'll have to share the crispy almond recipe with me!
